8 Can Taco Soup

OK so I made this recipe last night, I found it on Pinterest of course. On a little blog called High Heels and Grills The lady that shared the recipe said her sister handed it down to her. Well thank you sister!! I love the Taco soup I usually make and it is also a super easy recipe but it is not all cans and this is. So that in itself is pretty cool. I used all Organic products instead of the regular but I bet that made it taste better (: wink wink. So if you are like me a prefer Organic you may need to look around a bit but they are out there. I do most of my shopping at the commissary on base since my husband is in the Air Force and they tend to hide the organic products so searching is key. This Taco Soup is super chunky and filling. I let it cook for about an hour to really blend all of the flavors together but its ready as soon as its warm. I hope you enjoy this as much as my family did. We will surly be keeping this recipe around for years to come.

8 Can Taco Soup Ingredients

Ingredients:
1 (15 oz.) can black beans, drained and rinsed
1 (15 oz.) can pinto beans, drained and rinsed
1 (14.5 oz.) can petite diced tomatoes, drained
1 (15.25 oz.) can sweet corn, drained
1 (12.5 oz.) can white chicken breast, drained
1 (10.75 oz.) can cream of chicken soup
1 (10 oz.) can green enchilada sauce
1 (14 oz.) can chicken broth
1 packet taco seasoning

Directions:
Mix all ingredients together in a large pot.
Heat until warm, stirring occasionally.
Serve with tortilla chips, sour cream and cheese maybe even a lime.

Done with juicing? Never!

It has been a few weeks since I have sat down to write at my blog, but I have been consumed with work, Facebook, Pinterest, the Gym and eating healthy. Sorry guys lol no really that’s my life.  I made it threw the ten days juicing by the hair of my chiny chin chin. I can honestly tell you I hated every single second of not eating food, BUT I now know why I was so unhealthy. I am a sit on the couch and eat my face off kind of girl. It must have been all of those years I spent “smoking” (the green) and sitting on my ass that lead up to this point of what I call “my kind of obesity”, where you’re not really fat but by golly a few more days of fast food and you will be beyond that.

Juicing made me think of how I eat, the times in witch I do, the kind of food I consume and buy and also what I feed my family. I started looking into all different kinds of resources telling me about how to eat whole foods and how to add healthy foods back into your life and screw the box! the pre-made CRAP that’s out there and killing everyone. Almost all boxed foods or overly processed foods are linked to cancer, so if you know it is going to kill you why do we continue to eat it. Why do corporations continue to make it to kill us? I can tell you two reasons why, you ready? it’s a big one!

 Because we don’t care and they don’t care.

WHOA shocking isn’t it!! I’m sure your laughing but no really it’s the truth. So I have decided to care about myself and my family and stop hurting all of us by what we are putting in our body’s. Now I have chosen to go Vegan for an entire year and see how it affects me and my body and my lifestyle. My husband and daughter will continue to eat meat BUT we are only getting the “Organic” meats from local farmers and everything else in their diet will be Vegan.

This is a personal choice, I have health issues and my doctor wants me to try this and see how it helps me and I must tell you so far I have never felt better in my entire life!! (Health wise) I have energy, I sleep at night (I used to have the worst insomnia) I work out and I’m already chasing after the kids that were chasing me! it’s unbelievable! I owe it all to juicing and changing my diet.

Now you may wonder am I still juicing? HECK YEAH! I will never give the stuff up! I just don’t have it all day long like before, now I have it in between my meals and in the morning before anything else. I have never gotten back into drinking coffee because I don’t feel like I need it any longer. I know crazy hugh, but give up the coffee and see how fierce you’re head aches are and how you feel like you are coming off of heroin and I promise you, you will never drink it again. I’m not sure where all of this is leading me or what my path with food is, all I know is I love food, I love being healthy and now I am on the fast track to getting fit. I owe it all to the “reboot” and personal perseverance. if I can do this ANYONE can. Give it a shot, get healthy. If not for you do it for someone you love. It’s all worth it in the end.

Day Three Juicing

Where do I begin? This has most certainly been a roller coaster of emotions and physical strength the last few days. I have found that I am even more dependent on food than I ever thought! I have to feed my child and the children I work with every day 4-5-6 sometimes 7 times a day with snacks and it takes some serious self control to not just lick the bowl when they are done eating.

My husband and I have been tired, I have had the worst migraines and now I know why, because I LOVE coffee and when you are going threw a reboot well you have to give it up along with everything else. The only part I have looked forward to while juicing is the tea I get to drink before bed. All of the juices taste like crap to me I would say one out of the six we drink a day is stand-able. Day one I couldn’t even type on the computer I was so hungry and so tired and in so much pain I said forget it, they can wait! Day two I had to go to work and in the middle of the day I said screw it and had a half a cup of coffee. Now it’s day three and it’s so weird its like all of the sudden there is a change in me. People said it would happen but I was like, whatever! Yeah OK! but no seriously I have more energy today.

I still hate the juice but I feel my body craving it. It’s like a whole new level of nutrition. I really would have added food for dinner had I known how difficult this process was going to be, but now I see myself in the future at the grocery store making much wiser decisions. I am giving up all meat after my reboot and going back to vegetarian. My husband is not but that’s ok with me, my daughter pretty much already is, she doesn’t like any meat but bologna and Vienna sausages anyways. Maybe she will decide for herself in the future she wants to eat meat, maybe not either way I don’t care. So this has really opened my eyes to the way I look at food and how I view my bathroom, lord knows I have spent a few hours in there already and it has only been 3 days.

No significant weight loss yet. I am learning to drink more water even though I cant stand it! I am thinking of making all of our water aqua fresca style from now on but with no sugar. Just so I can drink as much as I am supposed to because I just don’t like water. I know I am not alone in this. I try so hard I add all of the lemon and the ginger to it like I am supposed to, I drink it hot or cold or however but yuck! I just cant get into it 😦 Another thing I hate about juicing is the mess, UGH it’s every day I have to wash the darn juicer, I peel so many oranges and lemons under my nails burn. Then there is juice all over the counter from cutting them and peeling and then you have to clean all of the pulp from the juicer and clean the juicer and the glasses and on and on and on. It seems like I am always cleaning. Guess it’s like a mini juicer work out.

I may as well get used to it though because I don’t think I will ever take juicing out of my life now that I can feel the benefits. I am not in love with this at all but I’m not regretting it yet so until I feel regret I can keep pushing forward.

Ok so we shopped around for awhile and I talked to like 100 juicers, seriously. I found out that it doesn’t matter how much money you spend all juicers pretty much all suck the same. They eventually slow down and they all express juice differently and some of them don’t even express wheat grass at all, you like have to wrap your fruits and veggies around it to get anything out of them?  Whatever what a pain in the ass! So we did some serious investigating until one night we were watching TV and saw a Jack LaLanne infomercial. The juicers worked great! and could express anything! (except of course banana’s and avocados) and they ranged from $35 to $200! Now they work a little differently, as the price goes up so does the speed and size of the juicer.  So we chose the Jack LaLanne Power Juicer Express – Black and chrome for $99.

Why did we go for the $99 one and not the $200, because we are going to be using it like crazy and we are new to this, chances are between my husband and I we are going to ruin it and have to buy another one. I’m not kidding 🙂 We found that this one can juice anything and it’s fast and simple. By the way whoa was I wrong about that! So we get our juicer in the mail (pictured above) YAY and the next day I am so excited to give this baby a try, so I decide to make us some apple juice.

So then I cut up some apples, grab some grapes and get to juicing (wash all of them first!) I am putting the juice rite into my daughters sippy cup. You may want to keep your fruits and veggies in the fridge or they wont be cold when you go to drink them, and warm juice to me is just yuck.

I made a mason jar full for the day, for all of us to drink. After Cambria (Our daughter)  drank her’s she pooed twice and said her tummy hurt, so I am going to have to cut her’s with half water and juice. Now that is the downfall to giving your child crap to drink for so long. Their little bodies actually have to get used to the nutrient rich juice they are getting. It makes me sad to think my daughters body is running on CRAP! Even though we buy the non concentrate organic juice for her by the time she drinks it, all of the nutrients are gone and even the organic company’s have to put water and fillers in their juice so it can sit out on the shelf or in the fridge for sometime before being consumed. When you juice you have to juice and drink it that day, because there is nothing added to the juice it wont last very long. Some people juice at night and then drink the juice the next day. I thought well that is just crazy, they need to juice and then drink it. That was until this-

Yeah that is the pulp collector, now You can put a bag in there (left over grocery bag) and it would make it a little easier for clean up or if you plan on using the pulp in recipes. For my blog though I wanted to show you just what you are getting into. Now here it doesn’t look so bad but, look at this-

My goodness what a mess! and you have to take apart the entire machine to wash it, the screen or filter is the hardest part because you have to get everything out of it, while being gentle and it really gets stuck in there, I ended up soaking mine for like 30 minutes. Then when you wash the blade it tears apart your sponge so you will need a brush. Then you have to check the entire machine to make sure that no fruits or veggies are left behind because they will rot and stink up your house and ruin the juicer. So I got to thinking, doing this every single morning for ten days or more will be very frustrating, very! Especially because I am no longer a stay at home mom. I cant imagine getting up and juicing early in the morning then getting ready, getting my child ready and then taking my juicer with me to work. Then what about my husband he is juicing too so what we get another one just for him to take to work too? Not gonna happen. Period. So I did some investigating and found out that if you use mason jars with little to no air left in the jar they will actually keep the juice from “turning” threw out the day. So you can juice all you’r stuff for the next day the evening before and save your sanity. This is how my husband and I plan to begin our journey to “reboot” our lives. I have to show you just how much pulp gets made by the machine though. It unreal to think that this is how much pulp you get in  just 6 apples and 2 cups of  grapes. Now just imagine how much we will have in over 60 fruits and veggies a day. You wanna clean that? Not me!! Especially since the house we are renting doesnt have a dishwasher.

I am no longer as threatened by the juicer as I thought I would be, now I am just worried about actually staying on track and focused on not eating but just drinking our food for ten days and possibly more. We are starting on the 1st of the month and you may wonder why, well it’s because that’s when we get paid and do our shopping, usually on the 1st and 15th. Now we will have to shop every Saturday at the farmer’s market so we can get fresh organic fruits and veggies every week. It is a change and we know this and are somewhat prepared. I have already been asked, what about Easter? Are you planning on missing the big feast? The answer to that is , yes.  Indeed we are and in truth it sucks. What is the rite time to make a change in your life though? Today is the answer to that. You would put it off forever if you wanted to wait until after a holiday or a birthday, wedding, cook out, get together, whatever!! We have got to just do this and quit procrastinating. Like I have said before it isn’t for everyone, but this is our own personal journey and I hope you take something from it, if anything you can just watch us suffer 🙂 LOL Hopefully we don’t suffer to long or to badly. Easter was Jesus’s rebirth, for us it is our “reboot” One more week to go…..

2 Weeks Until Reboot

Well its two weeks away, I am so nervous. You see me and my husband will be embarking on the “reboot”. One evening while sitting at home on my fat ass with nothing to do my husband finds this movie on Netflix called Fat Sick & Nearly dead.

 

It’s about this man named Joe Cross and how he is, well…. Fat, Sick, and nearly dead. Literally. He learns about juicing and how it can “reboot” your body and train your mind to start all over again.

Now at this I am no expert if you want to learn more about going 100% plant based to reboot your body you are going to either have to watch the movie or go look at the 100’s of blogs that can explain it better. This is just my personal journey I wouldn’t take any expert information from me. Now if you choose to just read about me suffering in the near future and get tid bits of information from it, then great. That’s about all I can give you on the “nutritional side of it.”  for now anyhow.

So anyways we are watching this movie and I look at myself and say damn! That’s me, I am well….fat, sick, and nearly dead!  Here are my reasons, I am 34 being as my mother only made it to her 44th birthday this scares me because if I am not healthy I am at the same risk she was. I used to weigh 140 lbs I was a brick sh!# house!! I now weigh 200 lbs!!! I have been having issues with cramps in my legs from carrying all the extra weight, my back hurts, I am tired more often and cranky as hell. I watch children for a living and it really can take a toll on me, I used to be able to chase them around and wear them out, now they do that to me instead. The number one reason for wanting to “reboot” is my daughter she will be two in May and nothing in this world is more important to me than my health (and hers) when it comes to her. I want to be here for her forever if possible. I love her more than anything and to imagine a life for her without me in it, just breaks my heart.

So we are watching this movie about Joe Cross and his journey with juicing (as well as a few friends he makes along the way), and it is definitely not easy, going from chewing food to just drinking juice. Him and one other man did it for 60 days!! I am attempting one week at a time, for a few reasons, I am a wussy, You have to shop week to week or the fruits and veggies will spoil and we have never juiced before so each week will be an adventure in flavors. Now on the website you will notice they have a few options for staring your personal “reboot” the 7 day “reboot” isn’t on there but I got a personal ten day “reboot” and it included eating a plant based meal in the evening as well. Now I am omitting the meal in the first seven days and if I feel like I must eat after the seven days we will introduce the plant based meals for dinner. Basically this is how the first three days of juicing goes, this is just to give you an idea of what we will be drinking every day.

 
Day One:

First thing in the morning:

8-16 ounces of hot water with lemon and ginger

16 oz. water (filtered is recommended)

Breakfast:

Carrot Apple Ginger Juice:
3 organic Carrots
2 organic Apples
1 small piece of Ginger (about 1″)

Mid morning:

Mean Green Juice:

1 Cucumber
4 Celery Stalks
2 Apples
6-8 leaves Kale
1/2 Lemon
1 tbsp Ginger

Lunch:

Gazpacho Juice:

4 Plum Tomatoes
1 large Cucumber
2 stalks Celery
1 Red Bell Pepper
1/4 small Red Onion
2 cups Parsley, leaves and stems, roughly chopped and packed into the measuring cup
1 Lime

Afternoon snack:

Citrus Inspired Green Juice:

6-8 leaves Kale
6-8 leaves Swiss Chard
1 Cucumber
6 Clementines

Dinner:

Sunset Blend Juice:

1 large Sweet Potato
1 medium Carrot
1 Red Bell Pepper
2 large Red Beets
2 Golden Delicious Apples
1 Orange, optional

Before bed:

Hot Herbal Tea (you can add Stevia for sweetness as desired).

Day Two:

First thing in the morning:

8-16 ounces of hot water with lemon and ginger (optional)
16 oz. water (filtered is recommended)

Breakfast:

Purple Power Juice:

6 cups Concord Grapes
1 Golden Delicious Apple
2 2 x 2” pieces Ginger
1/2 cup Blackberries

Mid-morning Juice:

Green Lemonade:

1 Green Apple
2 cups Spinach (~3 handfulls)
2 cups Kale leaves (~6-8 leaves)
1/2 Cucumber
4 Celery Stalks
1/2 Lemon

Lunch:

V28:

3 large Red Beets
2 medium Carrots
2 stalks Celery
4 Plum Tomatoes
4 cups Parsley, leaves and stems, roughly chopped and packed into the measuring cup
1 Jalapeno, ribs and seeds removed
12 Red Radishes

Afternoon snack:

Spinach-Fennel-Cucumber:

1 Fennel Bulb
1 Cucumber
3 Celery Stalks
3 cups Spinach

Dinner:

Bountiful Brassica Juice:

2 Broccoli stalks
1/2 head or 2 wedges Green Cabbage
2 cups or 6-8 leaves of Kale
1 organic Granny Smith Apple
1/4 Lemon (peeled)
1” Ginger root

Before Bed:

Day Three:

First thing in the morning:
8-16 ounces of hot water with lemon and ginger (optional)
16 oz. water (filtered is recommended)

Apple-Carrot-Beet:

2 Apples
4 Carrots
2 Beets
6 leaves swiss chard – 1.5 cup
1” ginger root (1 tablespoon)

Great Greens Juice:

2 Green Apples
2-3 cups Spinach
6-8 leaves Swiss Chard
1 Cucumber
4 stalks Celery
1/2 Fennel Bulb
1 bunch Basil

Tabbouleh Juice:

1 big bunch Parsley (approx. 4 cups)
1 Tomato
1/4 Red Onion
1/2-1 Lemon (peeled)
1/2 Cucumber
Dash Sea Salt and Black Pepper

Bruschetta Juice:

2 medium sized Tomatoes
1-2 cloves Garlic, peeled
20 fresh Basil leaves

Green Juice:

2 cups Kale
2 cups Spinach
1/2 Cucumber
4 stalks Celery
2 Green Apples
1” Ginger root

Hot Herbal Tea (you can add Stevia for sweetness as desired).

Now that you understand the routine, you see why I am a little nervous. You mean I don’t get to snack while watching TV or eat crap all day like processed cheese and chips and coffee and all of the stuff I love? Well to tell you the truth all of the things I eat are horrible for me, everything. I am completely dependent on food, I eat all day! I wake up with coffee, I eat when the kids eat witch is all day and I snack while watching t.v. If I am sad I stuff my face, if I am happy I celebrate with food and worst of all at night when I am cozy and getting ready for bed, I eat!!  What a terrible pattern, it’s no wonder all of the baby weight I lost came back after breast feeding. I only have myself to blame and I plan on fixing it, I hope you enjoy our adventure, its sure to be an awful one, at first 🙂 I have heard after the third day its a breeze, if you can make it that far. I feel that if I publish this I wont quit in fear of publicly embarrassing myself. Lets see if it works. My next post will be about purchasing our juicer, we are doing that this week. Oh! gosh.
